5 Step Vegan Carrot Cake

Hey guys & welcome back!! Summer is almost over, at least for the ones who haven't started yet, like me. I only have one year left until college and I'm so excited to just get it overwith. However, I don't know how it works in other countries, but here in Spain Senior year is the hardest and most stressful of all...So wish me luck, because I will need it :(

Today's post is about a Carrot Cake recipe I made with my best friends yesterday. This past few days have felt like we were in October/November because of the rain and  we didn't have a lot to do, so we decided to bake. We made the "Kit Kat" Cake which I already wrote about a couple of months ago and this Carrot Cake I am telling you about today. The Carrot one was really good, however the icing we made turned out pretty bad, so I will just give you the recipe for the cake :) 

It is really easy to make and perfect for breakfast. So now that school is here, I definitely recommend you bake it Sunday night so that you have it for the rest of the school-week. Always remember that breakfast it the most important meal and with this delicious cake you won't be able to skip it, because even if you are on a hurry you, can always grab a piece of cake. 
So, without further ado, let's get stated with this three tier Carrot Cake...




Ingredients:

  • 1 tablespoon of yeast
  • 450g wholemeal flour
  • 455g brown sugar
  • 450g carrot
  • 120g walnuts
  • 150ml water
  • 150ml orange fresh juice
  • 210ml olive oil
  • pinch of salt
  • 1/2 tablespoon of cinnamon
Directions:
  1. First of all preheat the oven 180 ºC
  2. Grind the carrots and the walnuts
  3. Squeeze the oranges until you make 150 ml of orange juice
  4. Mix all the ingredients together and put the dough in the mold
  5. Bake for 50 min aprox (temperature: 180ºC)

So this is all there is for an easy,but delicious Carrot Cake. It just takes you five steps to have the perfect breakfast for the rest of the week. I definitely think this recipe is worth a try :)

"Kit Kat" Cake

Hey guys, how was your week? Mine was awful, my finals are next week and I've been so busy studying this past few days :( Today I brought a dessert recipe I made last Wednesday for my sister's bday. She took it to school and all her friends loved it, they said it tasted like Kit Kat,lol. The problem was that she didn't take a picture of it hahahah. So here I have a picture I got from a website I really like "Deos la vuelta al día". And now, with no further ado, here is the recipe:




Ingredients:                                                         Time: 30-40 min
  • Graham crackers (Galletas María)
  • Milk 100ml aprox.
  • Cocoa powder (Newquik) *
  • Nutella
  • Milk or Dark Chocolate, as you wish (300gr or so)*
  • A tiny bit of butter for greasing


* If you are a coffee lover, I recommend using coffee instead of cocoa powder.

* Depending of how thick you want the last layer to be you will need more of less chocolate. I love     chocolate and I usually make a really think layer to make it contrast with the rest.

Directions: 
  1. Grease the mold you are going to use with butter.*
  2. Pour 100ml of milk in a bowl and mix in 3-4 cocoa powder spoons.
  3. Deep the graham crackers in the milk and take out when it gets soft. Before the cracker  "disolves". Repeat until you are able to cover all the base of the cake with graham crackers
  4. Then, put a couple of soops Nutella in a bowl and put it in the microwave for 20s or so. So it melts and becomes easier to spread.
  5. Spread the Nutella on to of the crackers. We are trying to create a layer of Nutella.
  6. Repeat the whole process as many times as you want. Depending on the number of layer you want.
  7. For the last layer, after you put the graham crakers, melt chocolate in a water bath. 
  8. Once you've melted the chocolate, pour it on top of the cracker and spread it.
  9. The cake is almost done, now you just have to cover it with something and stick it in the fridge for at least 3 hours.
* I recommend using mold in the shape f a rectangle or a square becasue it will be easy to make the cake.
