5 Step Vegan Carrot Cake

Hey guys & welcome back!! Summer is almost over, at least for the ones who haven't started yet, like me. I only have one year left until college and I'm so excited to just get it overwith. However, I don't know how it works in other countries, but here in Spain Senior year is the hardest and most stressful of all...So wish me luck, because I will need it :(

Today's post is about a Carrot Cake recipe I made with my best friends yesterday. This past few days have felt like we were in October/November because of the rain and  we didn't have a lot to do, so we decided to bake. We made the "Kit Kat" Cake which I already wrote about a couple of months ago and this Carrot Cake I am telling you about today. The Carrot one was really good, however the icing we made turned out pretty bad, so I will just give you the recipe for the cake :)

It is really easy to make and perfect for breakfast. So now that school is here, I definitely recommend you bake it Sunday night so that you have it for the rest of the school-week. Always remember that breakfast it the most important meal and with this delicious cake you won't be able to skip it, because even if you are on a hurry you, can always grab a piece of cake.
So, without further ado, let's get stated with this three tier Carrot Cake...

Ingredients:

  • 1 tablespoon of yeast
  • 450g wholemeal flour
  • 455g brown sugar
  • 450g carrot
  • 120g walnuts
  • 150ml water
  • 150ml orange fresh juice
  • 210ml olive oil
  • pinch of salt
  • 1/2 tablespoon of cinnamon
Directions:
  1. First of all preheat the oven 180 ºC
  2. Grind the carrots and the walnuts
  3. Squeeze the oranges until you make 150 ml of orange juice
  4. Mix all the ingredients together and put the dough in the mold
  5. Bake for 50 min aprox (temperature: 180ºC)

So this is all there is for an easy, but delicious Carrot Cake. It just takes you five steps to have the perfect breakfast for the rest of the week. I definitely think this recipe is worth a try :)
Hope you liked this post, I know this summer I haven't written a lot on the blog, but I have been really busy, I hope you guys forgive me. Have fun & Enjoy the rest of the summer!!

Decide. Commit. Succeed.

Hey guys, welcome back!! I hope you are having an awesome summer. This past few days I've had some time to meditate, go to the gym and figure some things out. I realized how impotant is to follow a healthy lifestyle and take care of ourselves. I've been always aware of that, but I don't know why this week in particular. Here are some tips that I think are very important to know

Every new day is a chance to change your life - It's really important to know that it's never to late to do something. So if you think you need a radical change in you life, go for it.You will never regret because if you don't do it you will live with we the doubt, what if...? Remember: BETTER LATE THAN NEVER!!

Remember why you started - This is cucial. If you always keep in mind the reason why you started doing what you are doing, you will focus more on achieving you goal and it will be hader for you to give up and quit. Write it down if it's necessary, but always remember why you started because it will motivate you and give you the strength succeed.

Healthy is not about the weight you lose, but about the life you gain - Many people believe that going to the gym means that you are on a diet and that you want to lose weight. This is true for some people but not for everyone. In fact I like exercising because it makes me feel better and it helps me scape from reality and blow off steam. By playing sports and going to the gym you will feel more active and healthier, the best feeling of all.

Hopefully this post will have inspired you and motivated you to improve you lifestyle and achieve your goals. Here I left you some cool quotes I found :)
Have a nice week!!

Feeling "Sanissimo" ?

Hey guys welcome back to my blog!! Today's post is about a super healthy restaurant I discovered 1 month ago or so called "Sansissimo". I love it, I've already been there twice because the food here is just incredible. The restaurant is vegan & vegetarian and they offer so many things, bagels, wraps, salads, healthy burgers, smoothies. I've tried the wraps and they taste so good, plus they are gigantic. I like them because you can design your own. My favorite one has feta cheese, lentils and chickpeas.

The desserts are awesome too, the portions are huge tho, I recommend sharing them with a friend, lol. I've tried the carrot cake which was delicious and also the brownie. I particularly don't recommend the brownie because it has no sugar at all, too healthy for me hahahaha. My friend tried the other day the oreo cake and she told that it was awesome too. Btw, they make the cakes there so if you ever go. they might not offer these that I mentioned because they are just not available, but I'm sure they will have other delicious ones :)

There are two Sanissimo's in Madrid that I know of, one in Pricipe Pio and the other one in Malasaña. The restaurants are small so if you plan on going with lots of people you should call and make a reservations before hand. The good this is that you can also just call and they with bring you your order home.

Well, I hope you liked this post, I you ever feel like eating healthy and wanna try a new place, try Sanissimo. Here I leave you some pictures that I took, I definately recommend it. Have an awesome week guys!!

4 Healthy Ice Cream recipes!!

Hey guys!! It's been while since my last post about food and since Summer is around the corner, I decided to post an Ice Cream recipe. So what I did basically is, I created the cream and then I added toppings, get creative!!

For the cream I used 4 over-ripe bananas. I cut them into little pieces, put them in a plastic bag and freezed them over night. The next day I took the bad out and left it outside for 30 min, in order for them to be a little bit soft.  Then, I used a blender machine to make the cream, you can also use a food processor.

Once you've made the cream, it comes  my favorite part. Depending on your taste you can create different flavors by blending different this with the banana cream and adding toppings. Here I am gonna give you some ideas. Last weekend I made number 1 and it was delicious. I can't be very percise with the quantities because I haven't made the other flavors. The key is to keep adding stuff until it tastes good, lol.

1. Chocolate & peanut butter banana Ice Cream:
  • 3 tablespoons of cocoa powder
  • 1/2 cup of toasted peanuts; you can also use peanut butter, but it's not as healthy :)
  • 1 tablespoon of Nutella
  • vanilla extract & a pinch of salt
  • For toppings: chocolate chips & peanuts
2. Dark Chocolate & coconut banana Ice Cream
  • 3 tablespoons of cocoa powder
  • vanilla extract & a pinch of salt
  • Dark chocolate melted & coconut
  • For toppings: chocolate chips, coconut
3."Raffaello" Ice cream
  • Coconut
  • White Chocolate
  • vanilla extract
  • For toppings: coconut and white chocolate chips
4. Berries and Banana Ice cream
  • Just mix the banana cream with any type of berries you like
Well, I hope you liked this post and  if you decide to make and ice cream don't forget to send me a pic of how yours turns out.

Top 5 restaurants in Madrid

Hey guys!! Today I am gonna show you 5 of my favorite restaurantes to hang out with friends in Madrid. Some of them are really popular, others aren't. I just wanted to share with all of you some cool places that a lot of people don't know about.

#1 Tierra

This restaurant is really popular right now. It is similar to Chipotle. The food is great and it is also very cheap. I usually get a burrito, because the give you the tortilla and you can put inside all you want, lol.

#2 Carpo

This restaurante is not very famous, but the food here is delicious. Everything is fresh and healthy. They have lots of different kinds of smoothies, sandwiches, etc. I've only been here once and loved it.I had a veggieburger and it was amazing.Even though and I not a huge fan of vegetables i really liked it because it wasn't really made of veggies. The main difference was that instead of meat, it had lentils

#3 San Wich
This restaurante is in Malasaña (Madrid downtwn) and it's burgers are amazing. I mean, look at the one I had, NO WORDS!!And guess what, this place is not that famous so its not as crowded at Tierra for example.

#4 Ojalá
I restaurant is great because of its decoration. There is a "beach" in it. Can you imagine?!

#5 Little Big Café
Honestly, I have never been there, but my friend recommended it to me and I trust here opinion ;) It's an awesome place to have brunch. The food here is very "eco", you can find smoothies, pancakes, etc
